Preheat oven to 400°F.
Rinse potatoes and cut into wedges. In a large bowl, toss potatoes with olive oil, salt, and La Criolla Ground Black Pepper, to taste, La Criolla Granulated Garlic, and La Criolla Paprika until fully coated.
Spread potatoes on a baking sheet and bake for 35 minutes, flipping once, until fries are crisp and golden.
In a medium bowl, combine La Criolla Garlic Salt, or salt of your choice, and La Criolla Ground Black Pepper, to taste, La Criolla Chili Powder, La Criolla Mexican Oregano, cilantro, orange juice, and lime juice.
Add flank steak to the marinade and let rest for 10 minutes.
Heat a skillet with a little olive oil over medium heat. Cook steak 3–4 minutes per side.
Let steak rest for 10 minutes, then dice.
Place fries in an oven‑safe skillet or pan, top with diced steak and shredded pepper jack cheese.
Broil until cheese is melted and bubbly.
