In a medium saucepot, bring the quinoa, water, and lemon pepper to a simmer.
Cover, reduce the heat to low, and cook for 25 minutes.
Once cooked transfer the quinoa to a large mixing bowl.
Preheat the oven to 425F.
Toss the vegetables in a large bowl with the seasoning and the dressing until evenly coated.
Place the vegetables over a parchment-lined pan and bake for 30 – 40 minutes.
Once the veggies are cooked, remove them from the oven, and let cool slightly.
Combine the quinoa with the vegetables in a large bowl.
