Tomato Herb Dressing

La Criolla Rosemary Prep:  2 minutes

Yield:  8 servings

Ingredients:

  • 2 Tbsp. La Criolla Spanish Olive Oil
  • 1 1/2 c. golden tomatoes, roasted
  • 1 clove garlic
  • 1/2  Tbsp La Criolla rosemary
  • 1/2  Tbsp La Criolla basil
  • 1/4 tsp La Criolla whole oregano
  • 1 1/2 Tbsp La Criolla honey
  • 1 1/2 oz. red wine vinegar
  • Lemon zest from 1 lemon

Combine all ingredients in a blender or food processor and process until smooth.  Serve over vegetables, or toss with greens and slivered almonds.

Refrigerate for up to 2 weeks.
