The first day of summer arrived June 21 and we couldn’t be happier! Although Chicago’s weather is making us a little crazy. Summer comes and so do salads! Salads are great all year long but I can’t get enough of them in the summer months. Remember, they don’t need to be labor intensive. By mixing your salads up you will want healthy summer salads all year long!
This summer I am trying to add some green to my diet every day. But you have to check out this recipe. It’s not so much greens as it is a beautifully colored tossed bean salad. Full of protein and flavor and almost all the ingredients you can get with La Criolla’s label. Oh and hopefully you already know this but La Criolla’s products are all natural, no preservatives, additives or dyes and our seasoning blends are offered no MSG.

Recipe: Lentil and Black Bean salad with cilantro lime dressing
1 cup La Criolla green dry lentils
1 can La Criolla black beans
1 pepper (red, green or both!)
1/2 red onion
2 medium tomatoes
large bunch of fresh cilantro
For the dressing:
Juice of 1 lime
La Criolla olive oil
1 tsp. dijon mustard
2 cloves garlic, chopped
La Criolla cumin
La Criolla Oregano
La Criolla salt
La Criolla Adobo picante (spicy)
La Criolla crushed red pepper flakes
Toss all ingredients together. Mix up the dressing and combine!
