We know those items on the menu that you always try to avoid because you know they are unhealthy. But what if we told you this chicken quesadilla recipe is healthy, tasty and gluten free!
- Corn tortillas (Gluten Free)
- 2 cups Mexican blend cheese
- 2 Skinless Chicken Breasts
- 1/2 red onion
- 1/2 red pepper
- 2 Tsps. Vegetable oil
- 1/2 Tbsp. La Criolla Chicken seasoning and La Criolla Fajita Seasoning
Make meat mixture first. Heat skillet with oil and cook chicken in chunks (or shred it when fully cooked) for about 8-10 minutes or until meat is cooked all the way through. Add onion and pepper to skillet. Sauté and add spices until you love the flavor! With La Criolla, a little goes a long way because our spices are have no additives, preservatives dyes or fillers. Then heat up tortillas on clean skillet with a little drizzle of oil to get them a little crispy and warm. Add meat mixture then top with another tortilla. When both sides of the quesadilla are toasted and warm, slide onto a plate and cut into fourths or eighths.
Serve with a small bowl of fat free sour cream or plain greek yogurt mixed with La Criolla Fajita seasoning or La Criolla Taco seasoning for extra flavor and yumminess!
